Most likely you’ve added the Oil too fast :*( It’s an Emulsion, it has to happen a little at a time, unless you do the Stick Blender trick, and just add it all to a big glass that fits the Stick Blender, put it all the way to the bottom, start it, and slowly pull it up and down as it thickens 🙂

I actually used a creamy local low fat quark as a base instead of the mayo and it tasted great.
