Homemade baked potato chips – a healthier (and cheaper) way to enjoy potato chips!

When you like potato chips as much I do, you have to figure out ways to make them healthy so you can indulge without worrying about fitting into your favorite pair of jeans!

Baked potato chips are the solution; they are simple, delicious and very easy to make with a mandoline slicer.

Another plus to making homemade potato chips are all the different seasoning options. They can be dusted with Old Bay Seasoning, sprinkled with fresh herbs or spiced with a good dose of black pepper. The options are endless when it comes to homemade baked potato chips – there are so many flavor combinations to play with!

For this oven baked potato chips, I’m keeping it simply and combining the sweetness of paprika with kosher salt.

How To Make Potato Chips In The Oven

Making potato chips in the oven is so easy!

The only thing to watch for is the baking time to make sure they don’t burn.

Preheat your oven to 380ºF and cover a baking tray with parchment paper.

For slicing the potatoes, you can use a mandolin or a knife. Try to cut slices that are about 1/8-inch thick, or thinner if you can!

Place the potato chips on the baking tray and brush a thin layer of extra virgin olive oil on both sides of the potato chips. Sprinkle paprika and salt on both sides and bake them in the oven for about 20 minutes, flipping them over after 10.

Keep an eye on them to make sure they don’t turn too dark, what you want is a nice golden brown color.

Oven baked potato chips are better when eaten straight out of the oven because that’s when they are at their crispiest. When left to cool and sit for too long the texture, just like with french fries, start to soften.

Don’t get me wrong, they are still very good but if you are planning on serving them as part of a dinner or as part of your Super Bowl snack menu (to serve with these green tea shots), I suggest baking them right before serving.

And if you happen to have leftovers, keep them in an airtight container or Ziploc bag. I also like to store my chips in the fridge to help them stay crispy for as long as possible.
